My Happy Tuesday Meal


We have come to the 7th week of this semester when we have to prepare for exams and lot of papers to write. I guess I am not the only one who are stressed over homework and exams right now.

Since recently I have had spent more time working on papers and preparing for the upcoming exams and quizzes, I did not get enough rest and did not get enough sleep. For today, after having some of my papers done, I made a small meal to offset the lack of energy and to ease the tension coming from my study.

My main dish was fried salmon with onions and a special type of sauce made from oyster sauce served with rice. I decided to have salmon today because it contains a lot of omega-3 fatty acids which is good for counteracting the negative effects of stress.

For the side dish, I made a sweet and sour salad. I mixed shaved carrot, chopped iceberg lettuce, sliced red cabbage with soy sauce, white vinegar, sugar and sliced shallot. Because vegetables is a great source of fiber, which also contains a lot of different vitamins needed for body, a small bowl of salad will supply my body with some vitamins and boost my energy levels.

I finished my meal with a small glass of strawberry smoothie.

For additional energy for the day, I supplemented my body a small extra amount of vitamin B12. Last fall semester, I took the Nutrition for Health Class and I learned that Vitamin B12 is good for your nerves and gives you energy. B12 is a solute vitamin so it is safe to consume with a rational amount.

Picture of the Day

The fall is slowly coming when the weather is getting colder with a few light rains and drizzles. Looking at this picture, I recall those rainy days when I’m home making a hot cup of chocolate and enjoy the rain.
On rainy days, a little cold and a little wet in the air calm me down. I enjoy the strangely peaceful feeling that comes to my mind whenever it rains. I love watching the rain falling from my bedroom window. I love listening to the rain sound and feel the fresh smell coming from wet ground and plants.
Holding the warm cup in my hands, I remember the time when I was in Vietnam. I have the same habit of watching the rain showering from the balcony.
I remember on school days, whenever it rained so heavily, my friends and I stood in front of the classroom waiting for the rain to stop. Sometimes, we were so impatient that we ran under the rain to go home. Although we got wet after all, we did have fun together.
Those times become one of the most beautiful memories that I have ever had. Thinking of those precious moments always makes me feel a lot happier.
Rainy days are the times when I take a little break for myself for having been working so hard on my college life. They are the times when I allow myself to temporarily forget about all the things that have been around my life and let myself immerse in nature and in those old beautiful memories and relax.
I think that most of the time, we are so busy with our work and life that we forget about one thing that we also need to rest. Sometimes, it is necessary to take a pause to ease the mind. I know some of you might think it is not easy to take a rest while you still have a lot of stuffs waiting for you to get done. But you know, machines even need to stop after a long day running, and so do we.
If you slow down a bit and take a small break, even only in a few minutes, you will not get too overwhelmed and you will gain back enough energy to get your mind and your hands back to work.
